Palak Rice

Palak Rice:
             Palak Rice is one of the easiest and quick rice recipe, which is perfect for lunch boxes and also quick morning breakfast recipes. It tastes delicious with mild flavours. 
          Palak is the most healthiest green leafy vegetable, which is rich in antioxidants and high nutritional values with good source of vitamins, minerals and iron.
                      It just takes 15 to 20 minutes to prepare. So, here I provided the preparation, please give it a try for yourself...
     
    
Ingredients:
  • Spinach(chopped) - 2 cups (which is about 3 bunc
  • Basmaormal rice - 1 cup( 250 ml)
  • Bay leaf - 1
  • Cloves - 3 to 4
  • Cinnamon - 1 inch
  • Shajeera - 1/2 tsp
  • Star anise - 1 
  • Cardamom - 2
  • Pepper - 1/2 tsp(optional)
  • Butter - 1 tsp(optional)
  • Green chillies - 10 or according to taste
  • Onion - 1 medium sized (chopped)
  • Salt as required
  • Garlic - 3 to 4 ( crushed)
  • Oil - 2 tbsp
  • Ghee - 1 tbsp
  • Dry chillies - 2 
Preparation:

  1. Firstly, cook basmati rice and keep aside. (If you want you can also use normal rice)
  2. Then grind 1 cup spinach by adding 6 to 7 green chillies to a paste and finely chop the remaining 1 cup spinach and keep aside.
  3. Now, heat 2 tbsp of oil and add bay leaf, cloves, cinnamon, shajeera, star anise, Cardamom and saute for half minute.
  4. Then add 2 to 3 dry chillies, 3 to 4 crushed garlic, 3 to 4 chopped green chillies and onion and saute for a minute.
  5. Now, add chopped spinach and cook for 2 to 3 minutes and then add spinach puree and saute for a minute and cook them by adding salt till water in puree gets evaporated.
  6. Once the water gets evaporated, add 1/2 tsp pepper(optional), 1tsp butter (optional) and saute for a minute.
  7. Now, add cooked basmati rice and mix them carefully without breaking the rice and add 1 tbsp ghee on the top of it and mix well, close the lid and cook for 2 to 3 minutes, check the salt and add if required.
  8. After 2 to 3 mins turn off the flame and Palak Rice  is ready to serve.
  9. Serve hot with vegetable salad and lemon.
Tips:
  • Basmati rice is optional. If you want you can use regular rice also.
  • Try to include Pepper and Butter which will increase the taste of the dish.( In the preparation I have mentioned it as optional because most of them doesn't have at home. So, if you have them don't skip them.…. They will add mild flavours to the recipe).
