Stuffed Brinjal

Stuffed Brinjal:
           Stuffed Brinjal is an authentic recipe made with tender and big sized eggplant/brinjal stuffed with peanut, sesame seeds and basic spice powders. It is a unique recipe, which goes well with ghee rice. If you are bored with regular guttivankaya gravy curry, then you should definitely try this recipe.
                This recipe is similar to masala guttivankaya, made in a slightly different way with unique flavor.
Stuffed brinjal
                             Usually we love to eat guttivankaya gravy curry in south Indian cuisine, it is very similar to it with slight changes which has made it one of the best and unique recipes.
         So, here is the preparation please give it a try for yourself...
Ingredients:
  • Brinjal - 250 gm ( preferably big ones)
  • Peanuts - 2 tbsp
  • Sesame seeds - 2 tbsp
  • Chana dal - 1 tbsp
  • Urad dal - 1 tbsp
  • Fenugreek - 1/2 tsp
  • Garlic cloves - 4 to 5
  • Red chilli powder - 2 to 3 tbsp or adjust according to your taste
  • Salt - as required
  • Turmeric powder - 1/4 tsp
  • Oil - for deep frying
  • Tamarind- 1 tbsp
Preparation:
  1. Take 250 gm or 9 brinjal ( preferably large ones), clean and wash them and remove the tail part of it and make a cross slit on tail part side on each of the brinjal and keep it aside.
  2. Now, in a pan, heat oil for deep frying and fry brinjal on medium flame until they become soft and when they slightly changed their color remove from the oil and keep them aside.
  3. In the same oil, fry 2 tbsp of peanut and keep them aside too.
  4. Now, heat another pan and dry roast chana dal, urad dal, fenugreek seeds, garlic, sesame seeds, cumin seeds and tamarind until they slightly turn to golden and switch off the flame and cool them down and blend to a fine powder by adding 2 to 3 tbsp of red chilli powder, 1/4 tsp turmeric powder and salt.
  5. Meanwhile remove the inner white part of the brinjal without breaking the outer layer and shift it to a wide bowl.
  6. Now, mix inner white part of brinjal with sesame powder and peanuts and adjust chilli powder and salt if required.
  7. Then stuff the mixture into the outer part of brinjal and press it to the brinjal shape. That's it stuffed brinjal is ready to serve. 
  8. If you want you can fry them on a pan with very little oil. ( Here I have skipped because it has a unique flavor and we already fried each and every ingredient used in it, so no need of it.)
  9. Serve it with ghee for rice, chapati, phulkas, naans etc., 
Tips:
  • Remove the inner white part of brinjal carefully without breaking the shape of brinjal.
  • This recipe goes well with ghee.
