GORUCHIKKUDU PALLI PODI FRY:
Goruchikkudu palli podi fry is a healthy addition to anyone's diet (goruchikkudu has a low calorie count of 16 cal in a cup) and also this vegetable should be on top of the list for those on low carb diet and weight loss diet. This is one of the best source of protein especially during pregnancy. Goruchikkudu palli podi fry is a perfect combination with sambar, rasam and rice. Also tastes good with chapathi/phulkas. By adding palli podi to the recipe enriches the taste of goruchikkudu. Here is the preparation... Try it for yourself...
Ingredients:
- Goruchikkudu-1/4 kg
- Onion-2 medium size ( finely chopped)
- Green chillies-5 to 6( finely chopped)
- Oil-2 to 3 tsp
- Peanuts-1/2 cup
- Coriander powder-2 tsp
- 1/2 cup curry leaves
- Dried coconut powder-2 tsp
- Ginger garlic paste 1/2 tsp
- Salt to taste
- Red chilli powder-2 tsp
- Turmeric powder-1 tsp
- Coriander leaves for garnishing
Preparation:
Preparation of curry powder:
- Take 1/2 cup of peanuts and roast them with 2 tsp of coriander powder, 2 tsp of cumin seeds, 2 tsp of dried coconut powder, 1/2 cup of curry leaves on a low flame.
- Let it cool and blend into fine powder by adding 2 tsp of red chilli powder, 1 tsp of salt and keep it aside.
- Take 1/4 kg of cluster beans( about 1 cup), wash them and remove the stalks and cut them into small pieces( of 2 inch length).
- Also cut the onions and green chillies and keep asside.
- Heat 2 tsp of oil in apan, add mustard and cumin seeds into it. Then add finely chopped onions and green chillis, mix well and fry them.
- After the onions turn golden brown, add 1/2 tsp of ginger garlic paste, 1/2 tsp of turmeric powder and stir for a minute.
- Then add chopped cluster beans to it and add 1 tsp of salt, mix well and cook for about 2 to 3 mins on alow flame.
- After 3 mins, add 3 tsp of water and cook untill the beans become soft.( took about 5 mins).
- Now add peanut curry powder to it and mix well. cook for 5 more minutes and stir in between constantly.
- Lastly, add some curry leaves and add some salt if required and cook for 2 to 3 mins.
- Turn off the flame. your goruchikkudu palli podi fry is ready to serve.
- Garnish with some coriander leaves and serve with rice or chapathi.
- Roast peanuts on a low flame.
- I added curry leaves at last as it adds extra flavour to recipe.
