COCONUT COOKIES

COCONUT COOKIES: 


Coconut cookies is simple, quick and easy to make with basic ingredients available in every kitchen. To make the cookies crunchy on the outside and chewy and soft on the inside, add more coconut and slightly underbake them.






It is a perfect combination with a cup of tea or coffee. Here is the preparation, please give it a try for yourself...

Ingredients: 

  • Maida - 1 cup (1cup= 250 ml)
  • Powdered sugar- 1/2 cup
  • Butter - 1/2 cup ( butter should be at room temperature)
  • Vanilla essence - 1/2 tsp
  • Desiccated coconut - 1/2 cup
  • Whole egg - 1 
  • Baking powder - 1/2 tsp
Preparation:
  1. Take a large bowl, add 1/2 cup Butter and 1/2 cup powdered sugar into it and beat them by using a whisker or until the mixture turns creamy.
  2. Now add 1/2 tsp vanilla essence, 1 whole egg and beat for 2 more minutes until fluffy.
  3. Then add 1 cup maida, 1/2 tsp baking powder and 1/2 cup desiccated coconut, mix well to a fine dough and refrigerate for 5 minutes.
  4. Meanwhile, preheat oven to 180°c on convection mode.
  5. After 5 minutes, roll the dough into balls ( according to your size), press gently on both sides and roll them in desiccated coconut and granulated sugar and place them on ungreased baking tray and press them slightly with a fork on each of the cookies.
  6. Now, place the tray in preheated oven and bake it for 15 to 20 minutes or until the edges of the cookies turn golden brown color.
  7. After that remove from oven and allow cookies to cool down for 10 to 15 minutes.
  8. Store cookies in an airtight container at room temperature.
Tips:
  • Butter should be at room temperature (so that it mixes well with sugar).
  • You can use powdered sugar or granulated sugar (powdered sugar takes less time to get creamy texture).
