CARROT HALWA ( GAJAR KA HALWA)

Carrot Halwa:

           Carrot Halwa popularly known as Gajar ka Halwa is an exotic Indian dessert mostly prepared in winter seasons. It is an easy recepie prepared with fresh carrots, milk, sugar, ghee and dry nuts of our choice

Although is a very simple to prepare with less ingredients, it tastes delicious. It can be served with warm or chilled by refrigerating. It tastes good with vanilla ice cream...try it for yourself. Here is the preparation of carrot Halwa.


Ingredients:

  • Fresh carrots 1/2 kg
  • Milk 250 ml
  • Sugar 200 gm
  • Ghee 3tsp
  • Dry nuts of your choice ( badam, cashew, golden raisans, watermelon seeds)  
  • Cardamom powder 1 tsp

     Preparation:

  1. Take 1/2 kg of fresh carrot( around 2 cups), wash them and grate the carrots using grater.
  2. Now, heat a heavy bottomed pan, pour 3 tsp of ghee and roast the dry fruits and keep it a side.
  3. In the same ghee add grated carrot and cook it for 5 mins till the carrots become soft.cook on low flame only.
  4.   Then add 200 gm of sugar to the grated carrots and mix well, as sugar will release  a lot of moisture and makes the entire carrot Halwa juicy.
  5. Cook the carrots untill the moisture in the carrots evaporates.
  6. Now add 250 ml of milk and cook it on low flame till the milk in the carrots evaporates.It can take 10 to 15 mins. 
  7. Stir in between constantly. 
  8. As milk in the carrots about to evourates, add 1 tsp of cardamom powder and stir and cook for 2 to 3 mins.
  9. Lastly, add the roasted dry fruits and mix well and cook for another 2 mins and turn off the flame.
  10. Your carrot halwa is ready to serve.
  11. Garnish with some nuts and serve warm or chilled with icecream.
  12. Trust me it is delicious with vanilla ice cream.

Tips:

  • Cook the carrot halwa on a low flame only.
  • Add sugar first because sugar will intensifies the moisture in the carrots which makes the halwa tasty and juicy.
  • If u want u can use full fat milk which increases the taste of the recipe.
